Turkey Soup, wheat-free gluten-free lactose-free
3/4 cup white rice or white basmati rice
1 turkey hind quarter (about 3 pounds)
1 medium onion, chopped
2 stalks celery with tips, sliced
1 green pepper, seeded and diced
1 cup chopped Jerusalem artichoke (optional)
2 1/2 quarts water
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. dried basil
- Rinse turkey and place it in a 6-quart pot.
- Add water, bring to a boil, and simmer 2 to 3 hours.
- Add remaining ingredients and continue to simmer 30 minutes.
