Rice With Pine Nuts

2 Tablespoons butter
1 cup uncooked white rice
6 medium chopped green onions
1/2 cup pine nuts
21/2 cups chicken broth
1 teaspoon grated lemon peel
1/4 teaspoon salt

  • Melt butter, Brown rice and nuts and 1/2 the onions or until nuts brown.
  • Stir in broth, peel, and salt.
  • Heat to boil, reduce, cover and cook 20 minutes.
  • Sprinkle with remaining green onions.
