Lee's Chicken Salad – YUM!!!!

  • Chop celery, onions (red or green) and 1-2 cans of canned chicken from Costco.
  • Chop sliver or red cabbage for color and flavor.
  • Add drained capers, lightly steamed French cut green beans (Costco frozen department), cherry tomatoes, etc.
  • Mix with Hellmann's mayonnaise only (no Miracle Whip!) and add Italian seasoning and garlic pepper to taste.
  • Sprinkle with ground golden flax seeds, almonds, pine nuts... add rice for more carbs.

Prep time 15 minutes

Serve on a bed of romaine lettuce and celery stalks; use the lettuce to roll the salad
