Falafel, wheat-free gluten-free lactose-free vegetarian vegan
2 cups cooked garbanzo beans
2 Tbs. chives or chopped leeks
1/4 tsp. pepper
1/2 tsp. each, rosemary, thyme, turmeric, or dry mustard
1/2 cold water
1 Tbs. sesame or olive oil
1 clove garlic
- Grind or mash garbanzo beans very fine.
- Add liquid as needed to make smooth paste.
- Add remaining ingredients.
- Mix well.
- Shape into 2-inch balls.
- Place on greased baking pan.
- Cover with foil.
- Bake at 350°, covered for 15 minutes.
- Turn balls and bake uncovered for 5 minutes.
- Sprinkle with chives before serving.
Option:
Instead of making balls, you can spread mixture 1/2 inch thick on a greased cookie sheet. Bake covered 15 minutes, uncovered 20 minutes, and cut into squares.
