Falafel

2 cups cooked garbanzo beans
2 Tbs. chives or chopped leeks
1/4 tsp. pepper
1/2 tsp. each, rosemary, thyme, turmeric, or dry mustard
1/2 cold water
1 Tbs. sesame or olive oil
1 clove garlic

  • Grind or mash garbanzo beans very fine.
  • Add liquid as needed to make smooth paste.
  • Add remaining ingredients.
  • Mix well.
  • Shape into 2-inch balls.
  • Place on greased baking pan.
  • Cover with foil.
  • Bake at 350°, covered for 15 minutes.
  • Turn balls and bake uncovered for 5 minutes.
  • Sprinkle with chives before serving.

Option:

Instead of making balls, you can spread mixture 1/2 inch thick on a greased cookie sheet. Bake covered 15 minutes, uncovered 20 minutes, and cut into squares.
