Dr. John's 3 C Soup, wheat-free gluten-free lactose-free
Chop:
Pre-cooked chicken parts or use left-over pre-cooked chicken you buy from Costco, etc.
3-5 stalks of celery
1 med. onion
1 small cabbage
Several small carrots - sliced (for taste & color)
Place in a 4-quart soup pot
- Sizzle the above in ΒΌ cup olive oil - then add 1 quart-sized container of organic chicken broth (Whole Foods or Trader Joe's)
- Place chicken in with onion, celery and cabbage.
- Heat to a slow boil and add capers and carrots (if on your food list) and green beans (frozen from Costco) -- squeeze the juice of a lemon into the mix and add Italian seasoning and garlic pepper to taste. You will never buy canned soup again!!!
If you need more fluid add more broth or a little pure water! Enjoy this chicken soup!
Prep time 15-20 minutes!!
